I know what you’re thinking. Isn’t it a little early to be talking about Rosh Hashanah? Well it may be early for you (although not to panic you, but it is only 20 days away), but I’ve been thinking about it since June.
Always on the search for a new Rosh Hashanah cake I came across this idea online and just had to try it out. This delicious honeycomb cake, covered with oozing honey and sugar bees, seemed just perfect for the occasion.
The dripping honey is actually homemade candy made with honey, sugar, water and vinegar. (What’s that expression? You catch more flies with honey than with vinegar? Not sure that can be applied here, although there’s only a tablespoon of vinegar in these. Why is there vinegar in the recipe? Chemistry? Hold on a sec while I look this up. Yep, the vinegar lowers the PH of the candy, making it more acidic so when it’s added to the other ingredients carbon dioxide is released. This makes the candy foamy, and when it cools, the candy is lighter.) This was my first foray into the world of candy and it was a lot of fun, if somewhat treacherous, to make.
I’m going to keep the secret of how to make the honeycomb under wraps for now. However, I will reveal that it is not made with a tiny melon baller. Good guess, though.
