Week after week I natter on about one cake or another. Every so often I’ll explain in detail how I achieved a particular effect, or created a specific feature. But let’s be honest, you’re never going to master the art of cake decorating solely by reading this blog. I do like to think of myself as a fairly decent writer, but even the most beautifully crafted description will never trump hands-on kitchen experience.

How on earth does one make a multi-looped ribbon out of sugar?  Well, these four people decided to finally stop wondering and find out. You’d think the baby wouldn’t have been so adept, but once you learn a few decorating secrets, it’s really just that simple.

Among other things, in only four two-hour sessions, these students learned how to make royal icing, use a piping bag, decorate beautiful cookies, make several varieties of flowers, create an edible picket fence, and finished off with the stunning final project cakes you see here. Not to mention all the useful little baking and decorating tips they picked up along the way. They join the scores of alumni who’ve already graduated from this course. Their numbers are legion. That would explain the proliferation of beautiful cakes you’ve seen around Jerusalem lately.

“Where do I sign up?” you ask. Well, sorry to raise your hopes and then dash them, but I won’t be conducting any classes again until after Pesach. But best not to let any grass grow under your feet. Let me know that you’re interested as soon as possible, because I can only accommodate a few students at a time. That way you get lots of personal attention, and the neighbours don’t complain about all the raucous noise emanating from my kitchen.
