One of the inevitable first questions I’m asked when people hear what I do for a living is, “how long does it take to make an average cake?” My answer, without fail, is, “I’m actually much happier not counting.” Each one is so labour-intensive that if I were to figure out how much I’m earning per hour, I’d instantly give it up to go work in high-tech. (Which would probably be a disaster as I know nothing about high-tech.)
This cake, however, leaves the rest of them in the dust. The technique around the sides looks relatively simple but it requires enormous patience, a steady hand and a streak of insanity. Those little ledges are built up one layer at a time, left to dry for hours and then built up some more. Why, you ask, would I bother? I mean, it’s pretty, but not pretty enough to warrant that kind of attention. Did I mention the streak of insanity? The truth is it’s a classic cake decorating technique that I learned many years ago. If you don’t dust off old skills once in a while you’re bound to forget them.
In retrospect, this one deserves to be forgotten. Never again.
